The accidental vegan

NOT EVERYONE HAS TIME TO COOK…

These recipes are aimed at people that really don’t have the time to cook, or simply don’t like to cook but still enjoy good food and want to follow a plant based diet.

If you are one of the lucky people that love to cook, I envy you. Unfortunately, I’m not, so I try to come up with dishes that are tasty and not time consuming.

I’m also a great fan of using leftovers, converting some of my grandmothers dishes into vegan or veggie dishes.

(haha she’d be 117 years old now. How time flies!)

I never made a concious decision to become vegetarian, or vegan for that matter. It was quite accidental. I was traveling around Asia for three months where the food is just phenomenal, but unfortunately thier food ethics are not the same as in Europe. So for this reason I never used to eat meat when traveling, which meant you would usually have to glance down to the bottom of the menu to see if you could get some kind of veggie dish, passing the wonderful array of flavors along the way.

I’ve never been a hunter of good restaurants, it was just what was handy at the time. Until recently!!! I met up with my son who follows a plant based diet, he is such a foodie and so particular about what he eats. He would walk for an hour to get to a good place to eat (this caused many arguments ha ha) But wow! I discovered a whole new world of food if you just put the time to research where you are going to eat.

Along the way you’ll meet many like minded people that will pass on their favorite places to you. I found veggie and vegan places in abundance. I even questioned some of the dishes thinking surely this contained meat.O.M.G. the tastes were pronominal. And that, was my accidental introduction to a plant based diet.

I don’t know about you, but I don’t like the whole “vegan bacon, veggie chicken, vegan teryaki beef!” processed food is not the path I want to go down.

This is all new to me, so as of yet I don’t really know what path I want to go down. I know that I want to stay plant based, and at the moment I am vegan. but I’m not sure if I will eventually go veggie. It will depend on how I’m feeling physically. At the moment I feel absolutely amazing and have never felt better in my life.

I’m taking this journey day by day. Ive been told that you have to take supplements if you are vegan, and that’s not something that I feel is natural with a good diet. I suppose what I’m saying is that I want to eat as naturally as I can. So I’ll take it from there…

I should say that I’m no great cook. My recipe’s are pretty old school and you certainly don’t need a degree in cooking to do them. Haha.

But I do enjoy putting nice tasty food together, I just dont really like to spend time following recipes. Hence the dishes I’m putting up on the sight. They’re quick and easy to do. And remember you can tweek each dish to your liking. I don’t use soya or tofu, I’m not a great lover of these, but please feel free to add them if you wish.

I lived with my grandparent’s growing up so was mainly influenced by simple easy cooking at that time. Most dishes then were based around budget and leftovers. Which is something i adhere to . I hate waste…
